Frustrated with having to think hard at every meal to find something I could cook in the available time, I finally decided to do some menu planning and cook in advance. I came up with several things which I know would freeze well after being cooked, and which make significant portions of a meal... and which I could cook in large quantity fairly easily.
Now I have several packages of chicken breast and a variety of other things to make into homemade frozen meals. (Banana bread, zucchini bread, chicken breasts, spiced quinoa, pancake mix, soup fixings, stew fixings...) I also found some good looking fresh blueberries that need to be picked through and then stored well; might freeze most of those too.
I'm glad I have tomorrow to work on this as well as tonight.
